Would you like to learn elements of cooking from different world cuisines?     
                                                         
Chef Nancy Longo was a culinary chef Instructor at BCC from 1987-until 1989, when she opened Pierpoint. She has returned there several times to teach classes ranging from , knife skills, production classes, world cuisines, as well as ran the restaurant class at L Ecole.  In 2001 she began teaching children's  classes at Pierpoint and Privately as summer camps and saturday morning classes.  In 2008 this garnered her a Baltimore's best for " Children's cooking classes in Baltimore" by Baltimore Magazine!
In 2007 Nancy resumed teaching Adults at her landmark restaurant Pierpoint and teaches as well as tailors classes for adults who want team building excercises, group parties, as well as book club events.
It is out of her dedication to cook as well as teach about technique, tastes as well as share the history and lore of food that she has been doing so for years.
So we invite you to come join us for a real cooking experience in a Restaurant setting!

AS WE MAY NOT ALWAYS BE ABLE TO FILL THE SPOTS AS WE GET CLOSER TO A CLASS DATE.  YOU MUST CALL AND RESCHEDULE IN ADVANCE OR the monies will be forfeited to cover the costs of food ,aprons & recipes that were purchased for you to attend. You may however, with 2 weeks notice, reschedule for an available class, OR there will also be a $ 25 food fee added to a re-scheduled class, if you do not cancel within the 2 week period. All classes must be prepaid, based on our class size being limited to 10, and our no turn away policy for gift certificate holders who have been pre paid.  We do not offer refunds for gift certificates. We do however honor the gift certificates for dining in the restaurant or a scheduled later date, with confirmation of availability for the class.

CLASS FEES ARE $ 75.OO PER CLASS.   And as stated above if you sign up in 2 weeks in advance for a specific class  there is a $ 10.00 discount   with the cost of a class being $ 65.00  ** please see above for fees for rescheduling  less than 2 weeks in advance.  so if you are buying this as a gift we suggest , you order the open ended $ 75.00 gift certificate  , so they can pick an choose, a class on a suitable date for them.

SATURDAY, JANUARY 7TH - LOW FAT COOKING - come learn new ways to cook low fat foods without sacrificing flavor, just in time for losing holiday pounds!  we cover how to take the fat out of foods including Cajun, Italian, French and American dishes. Learn how to remove fats, sugars, and what to substitute them with. (SOLD OUT)


SUNDAY, JANUARY 15TH  2012- CREATIVE VEGETARIAN COOKING -  this class is a great class or gift class for the vegetarian cook!   This class will cover vegan and vegetarian cooking in a creative style with spice mixes and combinations sure to please any vegetarian or non-vegetarian cook, or for those who are just looking to cook healthy vegetarian meals for friends or family. SATURDAY, JANUARY 28TH - SOUTHWESTERN - come learn tips for cooking southwestern cuisine.  How to smoke and season meats and seafood, how to make variations of salsas, hand made tortillas, as well as good marinades and other sauces and moles. (SOLD OUT)  


SUNDAY, FEBRUARY 12TH - MODERN ITALIAN COOKING - this class covers modern recipes for cooking Italian foods, sauces, antipasto, seafood, Italian style chocolate desserts, as well as cooking with Italian truffles.  This is a .very popular class, so sign up early!  (SOLD OUT)

SUNDAY FEBRUARY 26th  KNIFE SKILLS- So you are a person who cooks but does not enjoy the prep?  Need to learn better knife skills?  How to bone a chicken, cut meat and vegetables as well as clean seafood properly?

This class will teach you how to make the classic cuts for vegetables, beef, bone a chicken, filet a fish and prep other seafood.  We will make an international - French, Italian and Asian inspired menu from what we prep.  When we're done you will know how to cut your prep time in half.

SUNDAY MARCH 18TH INTERNATIONAL BBQ-  come learn the essentials of BBQ from all over the world, how to make dry rubs, wet barbecue, as well as Fruity, savory, and spicy Barbecue sauces.  We will cover, North Carolina, Texas, Indian, Korean, Japanese BBq styles. We will teach techniques of smoking and which woods are right for each style of smoking.

SATURDAY APRIL 14TH 2012- FISH COOKING - come learn the nuances of fish cooking and fish safety for the spring and summer months.  Learn great salads, soups, and sauces to go with the fish and shell fish we will be cooking!  This is a great class for those who like to eat healthy fish dishes, but want to learn new ways to cook them and proper techniques for cooking and buying fresh! SATURDAY, APRIL 21ST 2012 - INTERNATIONAL SAUCE MAKING - come learn how to make classic sauces from the French, Italian, Thai, Asian as well as other cuisines.  We  will cover the basics to help you with your sauce making for home cooking!    This is a great class for those who want to learn to make Demi glace, hollandaise, and other restaurant sauces.   We will cook meats, fishes, and poultry as well as vegetables and pasta to go with our sauces. MAY 22ND 2011  INTERNATIONAL BBQ     COME TAKE A CLASS ON BBQ STYLES FROM ALL OVER
the world.   We will teach you how to make your own rubs wet and dry mixes, barbecue sauces,  fruity, savory and spicy.  We will cover,   Texas, North Carolina, St, Louis style  barbecue styles, Korean, Japanese, as well as Indian styles.  Also covered will be the understanding of how to smoke, as well as the right woods for the right flavor.  


JUNE 12TH 2011 KNIFE SKILLS  come learn the essentials of how to bone a chicken, cut meat, as well as filet fish.  we will also cover basic use of different knives, classic vegetable cuts as well as how to sharpen knives.  we will then make an international inspired menu from the things we have cut up and learned, as well a lesson on a few sauces, and spice mixes.  this is a great class for a beginner cook as well experienced who want to learn new cuts.  SIGN UP QUICK THIS CLASS SELLS OUT FAST!



JULY 10TH 2011  Back by popular request  INTERNATIONAL BARBECUE  Come take a class on Barbecues from all over the  world,  We will teach you how to make your own rubs, wet and dry mixes, barbecue sauces, fruity and savory, and spicy.  We also will cover, North Carolina Barbecue, Texas Barbecue, Korean, Japanese, Indian styles too.  Also covered will be how to smoke, styles and wood choices for good smoking and good flavor. 


JULY 30TH 2011  INTERNATIONAL SAUCE MAKING-  come learn how to make the classic sauces of French, Italian,Thai, Asian, as well as other cuisines.  We will help teach you how to make sauces successfully at home.  This is a great class for those who want to learn how to make demi glace, Hollandaise, and other restaurant sauces.  We will cook meats, fish , poultry, as well as , pasta and vegetables to have with our sauces. 

AUGUST 7TH 2011  INTERNATIONAL APPETIZERS-  Just in time for the fall party season ,come learn appetizers from 10 different world cuisines, and sauces to accompany them.  The recipe ideas  are for modern interpretation of Thai , Asian, Indian
Greek, Italian, Brazilian,Spanish, Caribbean, Latin, American, and french cuisines. 

AUGUST 14th 2011  MODERN FRENCH   Come take a class and learn new techniques and recipe ideas on twists of French foods
and ideas or making them lighter as well as adding contemporary French ingredients. 

AUGUST 28TH 2011   MODERN CREATIVE AMERICAN   This class is for all cooks who want to learn some techniques on ho to cook New American cuisine and ho to make it healthy and flavorful, we will cover, California, New England, as well as southern cuisine.  This truly is a good class for any one who would like to learn more about how how restaurants develop New classics.


SEPTEMBER 4th 2011 FISH CLASS RETURNS  This class is on how to cook multiple varieties of fish , how to clean fish, and fish safety , as well as sauces, and seafood soups.   This class is Nancy's bench mark as she has been an advocate of fresh and safe fish including testifying in front of congress on the subject! 

SEPTEMBER 10TH 2011 THAI CLASS RETURNS -  RUN DO NOT WALK TO SIGN UP!   Come learn the secrets of Thai cooking with Chef Nancy Longo including spring rolls, curries, noodles,  Thai salads, soups, and more.  sign up quick as this class very fast!

SEPTEMBER 17TH  2011 INDIAN COOKING- come learn the secrets of Indian Cooking , how to make chutnies, breads as well as curries as well as regional masalas, this class is back by popular demand, HURRY this class sells out fast! SATURDAY  1-4 pm.


OCTOBER 9th  SAUCES 2011-  come learn the essentials of making classic and modern sauces for foods, we will cover Asian sauces, French sauces, Italian , Thai, Carribbean, and Cajun,  as well as modern American sauces.  This class will be set at a non discounted rate, as we will be eating LOTS of food and will help any cook who wants a lesson in how to make great sauces of any kind. we will also cover stocks and demi glace. $ 75 fee.


OCTOBER 22ND 2011  MODERN ITALIAN-  come learn new ways to cook Italian food in a modern way. sauces will be covered, antipasto, seafood,  cooking with truffle, as well as desserts. sign up fast as we only do this class twice a year, and it fills up fast! SATURDAY 1-4 PM 


NOVEMBER 5TH MODERN CREATIVE AMERICAN 2011  this class is for all cooks who want to learn some techniques on how to  coon New American cuisine and make it healthy and flavorful , we will cover New England, California,  as well as southern cuisine.  This class is a great class for anyone who want to learn how restaurants develop NEW CLASSICS! SATURDAY 1-4 PM 

NOVEMBER 6TH 2011 MODERN THANKSGIVING  this class is for all those folks who are tired of all the standard thanks giving foods, in this class we will teach the art of smoking game, new stuffing, and side dishes as well as ideas for desserts and how to make truffled turkey demi glace. SUNDAY 1-4 pm 


NOVEMBER 12TH 2011 SAUCES-  come learn the essentials of making classic and modern sauces for foods, we will cover Asian sauces, French sauces, Italian , Thai, Carribbean, and Cajun,  as well as modern American sauces.  This class will be set at a non discounted rate, as we will be eating LOTS of food and will help any cook who wants a lesson in how to make great sauces of any kind. we will also cover stocks and demi glace. NOVEMBER 26th 2011 SEAFOOD ,  THIS CLASS IS A COMBINATION OF CHEF NANCY'S FISH CLASS with the addition of techniques on how to cook shellfish properly, as well as ideas for sauces, appetizers, and modern ideas for cooking seafood.  1-4 pm $ 75 this is not a reduced fee class as we will be cooking all seafood. 

DECEMBER 3RD 2011 THAI.... COME LEARN THE SECRETS OF THAI COOKING , CURRIES, THAI APPETIZERS,DRUNKEN NOODLES, PAD THAI, AS WELL AS COOKING  THAI SOUPS, SPRING ROLLS AND OTHER THAI DISHES.     SIGN UP QUICK.  AS THIS CLASS WILL FILL UP QUICK!   1-4 PM.  $75 OR $65 IF SIGNED UP ONE WEEK IN ADVANCE.
